A FOOD TRADITION

Albanian Cuisine of North Macedonia

Albanian communities in western and northwestern North Macedonia, especially around Tetovo, Gostivar, Debar, and Kicevo, maintain a culinary tradition shaped by mountain agriculture, pastoralism, Ottoman-era cooking, and close links with Albanian foodways elsewhere in the Balkans. Wheat flour, cornmeal, beans, peppers, onions, yogurt, lamb, and preserved vegetables are central. Common techniques include slow baking in covered pans, layering or stretching dough, stuffing vegetables, and simmering meat with dairy or peppers. Representative dishes include flia, a layered baked pastry; tavë kosi, baked lamb or meat with yogurt; and japrak, stuffed vine leaves. Local variations are substantial, so these dishes should not be treated as exclusive to the country.
