A FOOD TRADITION
Ankole Cuisine
Ankole cuisine is associated with Banyankole communities in southwestern Uganda and with neighboring foodways in the wider Great Lakes region. It combines millet, sorghum, bananas, beans, milk, beef and cultivated greens, with pastoral and farming households emphasizing different proportions of those foods. Eshabwe, a rich sauce made from ghee and traditionally served with staple foods, is especially characteristic, while akaro or oburo provides a firm millet or sorghum accompaniment. Other familiar preparations include matoke with groundnut sauce and slow-cooked beef or goat stews. Fermented milk and grain beverages also form part of the broader culinary tradition.
