A FOOD TRADITION
Ardennes cuisine
Ardennes cuisine describes the forested and upland cooking traditions of southeastern Belgium, while also forming part of a wider cross-border Ardennes tradition extending into Luxembourg and France. Historically it relies on hardy local produce, potatoes, cabbage, beans, pork, game, freshwater fish, mushrooms, berries, and smoked or cured meats. Smoking, curing, stewing, roasting, and preserving are especially characteristic, reflecting rural households and woodland environments. Examples include jambon d'Ardenne, an established cured ham tradition; trout prepared with local herbs or butter; and game or wild-boar stews served with potatoes or root vegetables. It should not be treated as an exclusively Belgian invention.
