A FOOD TRADITION
Aromanian Cuisine of North Macedonia
Aromanian, or Vlach, communities in North Macedonia, including those associated with historic pastoral and commercial centers such as Kruševo and Bitola, preserve foodways shared with Aromanian communities across the southern Balkans. The tradition emphasizes sheep and goat dairy, lamb and other meats, cornmeal, wheat flour, beans, peppers, mountain herbs, and preserved foods. Household cooking commonly uses hearth baking, grilling, long simmering, and the preparation of dense dairy-based or grain-based dishes suited to upland life. Representative foods include pitu, a savory filled pie; katsamak, a cornmeal preparation; and mamaliga served with cheese, yogurt, or meat. Terminology and recipes vary considerably between communities.
