A FOOD TRADITION
Awadhi Cuisine
Awadhi cuisine is associated especially with the Lucknow region and the wider middle Ganges plain. It emphasizes delicately layered seasoning rather than uniformly intense heat, using rice, wheat, meat, yogurt, saffron, cardamom, kewra, and browned onions. Slow dum cooking, careful stock-making, skewering, and finely ground spice pastes are characteristic techniques. Recognizable examples include kakori kebab, galouti kebab, and Lucknow-style biryani, alongside richly seasoned breads and gravies. Awadhi cooking developed through courtly and urban exchange, and should be understood as a regional tradition within broader North Indian and Indo-Islamic culinary histories.
