A FOOD TRADITION
Balochi Cuisine
Balochi cuisine reflects the arid and coastal environments of Balochistan, as well as pastoral and tribal foodways extending into Iran and Afghanistan. Lamb, goat, sajji-style whole meat, rice, dates, wheat breads, dairy, and locally available fish are important ingredients. Traditional cooking often relies on open-fire roasting, earth or pit cooking, skewering, and simple seasoning designed for long journeys and communal gatherings. Sajji, landhi or dried meat preparations, and kaak, a bread baked around a heated stone or metal form, are representative examples. Coastal Balochi communities also maintain seafood traditions that differ from inland pastoral cooking.
