A FOOD TRADITION

Banat Cuisine

Banat cuisine developed in the western Romanian plain and surrounding borderlands through interaction among Romanians, Serbs, Hungarians, Germans, Croats, and other communities. It combines Central European and Balkan methods with local agricultural produce. Pork, paprika, onions, peppers, noodles, potatoes, cabbage, dairy, and seasonal fruit are prominent. Baking, bread-making, smoking, preserving, dumpling preparation, and slow stewing are characteristic, and household cooking often includes both rustic peasant dishes and Austro-Hungarian-influenced pastries. Examples include papricas, a paprika-rich stew; langos, a fried yeast dough; and placinta banateana, a regional filled pastry. The tradition is shared across present-day borders and should not be assigned exclusively to Romania.
