A FOOD TRADITION

Banda cuisine

Banda foodways are associated with communities across central and eastern Central African Republic, with related practices extending into neighboring countries. Meals commonly center on cassava, millet, sorghum, maize, plantain, leafy greens, groundnuts, freshwater fish and, where available, hunted meat. Roots and grains are pounded or cooked into firm porridges, while greens, peanuts and smoked ingredients form substantial sauces. Fish and meat may be smoked, grilled or wrapped in leaves before cooking. Dishes associated with the broader Banda area include cassava or grain fufu, kanda-style meatballs, groundnut sauces and maboké, a leaf-wrapped preparation of fish or meat. These foods are shared rather than exclusive to Banda communities.
