A FOOD TRADITION
Bela Krajina cuisine
Bela Krajina cuisine comes from southeastern Slovenia, a culturally layered area influenced by Dinaric, Pannonian, Croatian, and historic Uskok traditions. Its traditional pantry includes maize, buckwheat, potatoes, cabbage, beans, pork, lamb, fresh cheese, honey, and seasonal forest products. Hearth baking, griddle cooking, spit roasting, souring, and the preparation of filled or rolled doughs are characteristic techniques. Familiar examples include belokranjska pogača, a round salted flatbread traditionally broken by hand; belokranjska povitica, a rolled filled pastry; and distinctive maize, buckwheat, or cabbage-based household dishes. The cuisine is especially associated with rural hospitality, communal baking, and borderland cultural exchange.
