A FOOD TRADITION

Belizean Maya Cuisine

Belizean Maya cuisine encompasses foodways maintained by Yucatec, Mopan, and Q’eqchi’ Maya communities, particularly in northern, western, and southern Belize. Maize, beans, squash, cassava, chaya and other greens, forest foods, freshwater fish, poultry, and game are used alongside recados, chiles, herbs, and achiote. Core techniques include nixtamalizing corn, grinding masa, wrapping and steaming foods in leaves, roasting, boiling, and cooking in earthen or metal pots. Examples include tamales, caldo or chirmole-like stews, and tortillas with bean or meat fillings. Practices vary substantially among Maya peoples and across borders, so this category should remain broad rather than being split prematurely into small ethnolinguistic entries.
