A FOOD TRADITION

Bicolano Cuisine

Bicolano cuisine comes from southeastern Luzon, especially the Bicol Peninsula, where coconut, abundant rainfall, seafood, and chili peppers strongly shape everyday cooking. Coconut milk is used in stews, vegetables, and seafood, while siling labuyo and fermented shrimp or fish provide heat and depth. Common techniques include simmering ingredients in coconut cream, grilling, smoking, and wrapping food in leaves. Well-known examples are laing, pinangat, and Bicol express, alongside sour seafood soups and vegetable dishes. The tradition is not simply defined by spiciness; souring agents, aromatics, and local greens are equally important.
