A FOOD TRADITION

Bubi cuisine

Bubi cuisine is rooted in Bioko Island and reflects the food traditions of the island’s Indigenous Bubi communities, alongside later Central African and Spanish influences. Plantains, cassava, yams, taro, cocoyams, leafy vegetables, palm products, and fish are central ingredients, with coastal households making particularly strong use of fresh or smoked seafood. Cooking methods include boiling and pounding starchy crops, grilling or stewing fish, and preparing peppery palm-oil or tomato-based sauces. Examples associated with Bioko foodways include fish caldo, pounded plantain served with fish sauce, and malanga or cassava preparations accompanying stewed seafood. Terminology and recipes differ between villages and urban settings.
