A FOOD TRADITION
Bukovynian Cuisine
Bukovynian cuisine is associated with Bukovyna in southwestern Ukraine and reflects the region's Ukrainian, Romanian, Moldovan, Jewish, German, and other historical communities. Its everyday ingredients include cornmeal, potatoes, cabbage, beans, peppers, pork, poultry, dairy, and orchard fruit. Characteristic methods include baking in hearth ovens, simmering stuffed vegetables, fermenting cabbage, smoking meat, and preparing layered or filled doughs. Representative foods include mamaliga and related cornmeal dishes, holubtsi, tochana-style meat stews, banosh in upland areas, and festive walnut, poppy-seed, or fruit pastries. Because Bukovyna is a cultural borderland, many dishes are shared with neighboring cuisines; its importance lies in the combined regional repertoire and historical coexistence of culinary traditions.
