A FOOD TRADITION

Caiçara Cuisine

Caiçara cuisine belongs to traditional coastal communities of southeastern and southern Brazil, particularly along parts of São Paulo, Paraná, and Rio de Janeiro. It combines Indigenous, Portuguese, and African inheritances with fishing, small-scale farming, and forest-edge gathering. Fish, shellfish, cassava, corn, plantains, coconut, beans, and locally available greens are prepared through grilling, stewing, smoking, drying, and making thick cassava-based broths. Examples include fish or seafood moquecas, pirão made from seasoned fish stock and manioc flour, and cuscuz de farinha de mandioca or corn-based coastal couscous. Caiçara cuisine is a cultural and ecological foodway spanning state boundaries, not an arbitrary administrative cuisine.
