A FOOD TRADITION

Cebuano Cuisine

Cebuano cuisine is rooted in Cebu and the wider central Visayan sphere, with strong connections to coastal fishing, pork production, tropical fruits, and trade between islands. Rice, seafood, pork, vinegar, soy sauce, ginger, garlic, and citrus are common foundations. Roasting over charcoal, grilling, braising, drying, and preparing raw or lightly cured seafood are prominent techniques. Representative foods include lechon Cebu, puso rice, and sutukil preparations that combine grilled, soupy, or raw seafood. Cebuano foodways also encompass hearty vegetable dishes and festive cooking that has influenced perceptions of Visayan cuisine more broadly.
