A FOOD TRADITION

Central Mozambican Cuisine

Central Mozambican cooking is associated with the Zambezi valley, the lower Zambezi and inland communities extending toward the coast. It draws on Sena, Ndau and neighboring foodways, using maize, cassava, rice, beans, groundnuts, leafy vegetables and river or coastal fish. Staples are commonly boiled, pounded or ground into porridges and meal accompaniments, while coconut appears more frequently nearer the coast. Slow simmering and open-fire grilling are important techniques. Mucapata, a rice-and-bean preparation often enriched with coconut, leafy-green relishes such as nhangana, and grilled or stewed fish are representative examples of this broad central cooking tradition.
