A FOOD TRADITION
Chadian Arab Cuisine
Chadian Arab cuisine covers related but varied foodways among Arabic-speaking pastoral, trading, and settled communities across central, eastern, and northern Chad. Millet and sorghum remain important in the Sahel, while wheat, dates, milk, mutton, goat, okra, sesame, and groundnuts appear according to landscape and access to markets. Flatbreads, porridges, grilled meats, and long-simmered stews are common techniques, alongside drying and preserving dairy or meat for travel. Kisra or other thin breads, aseeda with savory sauce, and shorba-style meat or vegetable soups are useful examples. These traditions overlap with Sudanese, Libyan, and wider Saharan-Arab foodways.
