A FOOD TRADITION

Chewa cuisine

Chewa cuisine is a maize-centered food tradition found across much of central Malawi and extending into eastern Zambia and northern Mozambique. Its everyday structure pairs nsima, usually made from maize meal, with ndiwo relishes of pumpkin leaves, other greens, beans, groundnuts, dried fish or meat. Cooking commonly involves pounding, boiling and simmering ingredients into thick relishes, while seasonal produce is dried for later use. Representative foods include nsima with mkhwani, leafy-green relishes enriched with groundnuts, and chambo or other fish served with tomato and onion relish. These practices are shared with neighboring communities and should not be treated as uniquely Chewa inventions.
