A FOOD TRADITION

Chungcheong Cuisine

Chungcheong cuisine comes from the inland and western-central provinces traditionally known as Chungcheong, including areas around Daejeon, Cheongju, and the Geum River basin. It is often associated with restrained seasoning, grains, beans, vegetables, freshwater fish, and seafood from the western coast. Soy sauce, doenjang, salted seafood, and seasonal greens provide depth without overwhelming the main ingredients. Common techniques include simmering, steaming, drying, and preparing clear soups and simple namul. Representative examples include eoriguljeot-style salted oysters, dotorimuk acorn jelly dishes, and freshwater fish stews such as maeuntang. Its patterns overlap with neighboring central and western Korean cuisines.
