A FOOD TRADITION
Colombian Llanos Cuisine
Colombian Llanos cuisine comes from the Orinoquia grasslands and river settlements, where cattle raising, fishing and llanero ranch life have shaped foodways shared in part with Venezuela. Beef, pork, freshwater fish, cassava, plantain, rice, corn and dairy products are common staples. Open-fire grilling, roasting on skewers, boiling and slow cooking are characteristic techniques, often suited to communal outdoor preparation. Notable examples include ternera a la llanera, also called mamona, llanero-style hayacas and tungos de arroz. River fish preparations and meat stews also form an important part of the regional repertoire.
