A FOOD TRADITION
Congolese Swahili Cuisine
Congolese Swahili cuisine is found especially along Lake Tanganyika and in eastern towns linked culturally and commercially with Tanzania and Burundi. It combines Congolese staples such as cassava, plantains, beans and lake fish with Swahili techniques and seasonings, including rice cooking, spice-based stews, frying and flatbread preparation. Coconut, cardamom, cloves and chilies are more prominent in lakeshore and trading communities than in much of the interior, though availability varies. Familiar examples include pilau, biryani, sambusa, chapati and spiced fish or coconut fish curry. These dishes are shared across the western Indian Ocean and Great Lakes worlds, so the tradition should not be assigned exclusively to the DRC.
