A FOOD TRADITION

Darfuri Cuisine

Darfuri cuisine reflects the foodways of western Sudan, including Fur, Masalit, Zaghawa, and other communities, while also sharing techniques with neighboring Chad and the wider Sahel. Millet and sorghum are central staples, accompanied by okra, leafy greens, groundnut, sesame, milk, and locally available meat. Grain is commonly pounded into flour, cooked as a firm porridge, or fermented for flatbreads; vegetables and meat are simmered into richly seasoned sauces. Examples include millet or sorghum aseeda, okra mullah, and umfitit, a prepared dish based on crumbled bread or grain with accompanying sauce and seasonings. Terminology and recipes differ across Darfur communities.
