A FOOD TRADITION

Djerban Cuisine

Djerban cuisine is the island-based cooking tradition of Djerba and nearby southeastern Tunisia, shaped by Arab, Amazigh, Jewish, and Mediterranean communities and by a strong fishing and farming economy. It commonly combines couscous, semolina, wheat, barley, olive oil, tomatoes, peppers, onions, garlic, seafood, lamb, and preserved ingredients. Cooking often uses steaming, baking in communal or household ovens, and slow preparation of sauces and stews, with distinctive use of mixed grains and seafood. Representative dishes include couscous djerbien, a steamed couscous with vegetables and meat or fish; hout koucha, baked fish; and marqa djerbi, a richly seasoned stew.
