A FOOD TRADITION
Dzūkian Cuisine
Dzūkian cuisine is associated with southeastern Lithuania’s wooded, sandy region and with villages historically dependent on rye, buckwheat, foraging and small-scale agriculture. Mushrooms, forest berries, potatoes, buckwheat, rye, pork and freshwater fish appear prominently. Characteristic techniques include drying and preserving mushrooms, baking dense grain dishes, smoking meat and fish, and preparing simple soups and porridges from pantry staples. Recognizable examples include buckwheat babka, potato bandos baked on or near the hearth, and mushroom soups made with fresh or dried forest mushrooms. The tradition shares ingredients with neighboring Belarusian and Polish foodways without being reducible to either.
