A FOOD TRADITION
Eastern Cuban Cuisine
Eastern Cuban cuisine refers to foodways associated with Oriente and the island’s southeastern and northeastern regions, where Spanish, African, Indigenous Caribbean, and later Caribbean immigrant influences meet. Its cooking often emphasizes green bananas and other viandas, coconut, seafood, pork, rice, beans, and robust stews. Banana-leaf wrapping, pounding, roasting, and long simmering are common techniques. Representative preparations include bacán, a banana-based tamal, calalú, and eastern-style congrí. The category is regional and overlapping rather than exclusive: many preparations are also found elsewhere in Cuba, but their combinations, local ingredients, and historical context give eastern cooking a recognizable profile.
