A FOOD TRADITION

Efik-Ibibio Cuisine

Efik-Ibibio cuisine is associated with the Cross River and southeastern coastal areas of Nigeria, while related foodways extend through neighboring Gulf of Guinea communities. It emphasizes plantain, cassava, cocoyam, yams, leafy vegetables, palm oil, seafood, smoked fish and shellfish. Soups are frequently enriched with ground seeds, vegetables or palm fruit and served with pounded or boiled starches. Well-known examples include edikang ikong, afang soup and ekpan ku kwo. Coastal access, rainforest produce and riverine trade give the tradition a strong seafood and vegetable character, though inland versions use more farmed roots and dried ingredients.
