A FOOD TRADITION
Eritrean Red Sea Coastal Cuisine
Eritrea’s Red Sea coastal cuisine developed among port towns, fishing communities, island populations, and inland groups connected to the coast through trade. Seafood, rice, wheat breads, legumes, dates, chilies, and aromatic spice mixtures feature prominently, alongside cooking practices influenced by long-standing links with Arabia, Sudan, and the wider Red Sea. Fish and shellfish may be grilled, fried, stewed, or combined with spiced rice, while sauces and breakfasts based on fava beans and flatbreads are also common. Recognizable examples include grilled or stewed samak, spiced fish-and-rice preparations, and shahan ful. The tradition is especially associated with Massawa and other coastal settings, but it is not confined to municipal boundaries.
