A FOOD TRADITION

Fang cuisine

Fang cuisine is associated with communities in mainland Equatorial Guinea, especially Río Muni, and with related foodways across southern Cameroon and northern Gabon. Everyday cooking commonly combines cassava, plantain, cocoyam, maize, groundnuts, forest greens, palm oil, freshwater fish, and smoked or stewed meats. Root crops may be pounded into fufu-like accompaniments, while leaves and protein are simmered into dense sauces or soups. Representative preparations include okok-style leaf dishes with groundnut or meat, cassava-based mintumba, and saka-saka or similar pounded-leaf stews. Names and recipes vary across Fang-speaking areas, and some dishes are shared widely across Central Africa rather than being exclusive to Fang communities.
