A FOOD TRADITION
Fante Cuisine
Fante cuisine reflects the coastal and forest-edge foodways of Fante-speaking communities in central and western Ghana. Fish, maize, cassava, plantain, cocoyam, palm oil, tomatoes, onions, and fresh or dried peppers feature prominently, with fishing communities developing numerous methods for grilling, frying, smoking, and stewing seafood. Fermented maize dough is prepared into Fante-style kenkey, while fish may be simmered in richly seasoned sauces or cooked as fante-fante, a celebrated fresh-fish stew. Other meals combine boiled plantain or cassava with vegetable sauces and pepper condiments. Fante cooking overlaps with broader Akan and coastal traditions, but its seafood emphasis merits separate cultural recognition.
