A FOOD TRADITION

Fergana Valley Cuisine

Fergana Valley cuisine reflects the densely settled oasis culture shared across eastern Uzbekistan, southern Kyrgyzstan, and northern Tajikistan. Its cooking combines agricultural abundance with long-standing Uzbek, Tajik, Kyrgyz, and other local influences. Rice, lamb, beef, poultry, wheat flour, legumes, onions, carrots, seasonal vegetables, herbs, and fermented dairy are central ingredients. Techniques include high-heat frying, layered rice cooking, baking in tandir ovens, and hand-forming noodles and filled doughs. Representative foods include Fergana-style plov, manti, and lagman, although all are shared across Central Asia and have many local versions. The tradition is regional and culturally interconnected, not an exclusive Uzbek category.
