A FOOD TRADITION
Fezzani cuisine
Fezzani cuisine is the Saharan food tradition of southwestern Libya, shaped by oasis settlement, caravan movement, and Tuareg and other desert communities. Dates, wheat, barley, millet, sorghum, couscous, dried foods, goat, mutton, and occasionally camel meat are important, while oasis produce such as dates and vegetables supplements imported staples. Cooking favors durable ingredients, communal grain dishes, bread baked in hot sand or ovens, and stews prepared slowly in pots. Representative foods include Fezzani-style couscous, bazeen, and date-based preparations, alongside meat stews and flatbreads. Its flavors and methods overlap with Saharan traditions across national borders.
