A FOOD TRADITION
Frisian Cuisine
Frisian cuisine developed in the northern coastal province and the Frisian cultural area, combining dairy farming, arable agriculture, inland and coastal fishing, and preservation suited to a cool maritime climate. Potatoes, rye, buttermilk, cheese, beans, pork, smoked sausage and eel appear frequently. Baking, smoking, simmering and the use of dairy-based preparations are central techniques. Familiar examples include sûkerbôle, a sweet spiced sugar bread; Fryske dúmkes, small aniseed and hazelnut biscuits; and Frisian dry sausage, a firm seasoned sausage traditionally preserved by drying or smoking. These foods belong to a broader North Sea and northern Dutch context while retaining a clear Frisian cultural identity.
