A FOOD TRADITION

Fulani Pastoral Cuisine

Fulani pastoral cuisine in Niger is associated with mobile and settled Fulani communities across the Sahel, including areas of western, central and southern Niger. It emphasizes millet or sorghum alongside milk, fermented milk, butter, cow or goat meat and, where available, wild or cultivated greens. Techniques include fermenting and churning dairy, preparing grain porridges, pounding grains, drying meat and cooking simple stews over portable fires. Fura da nono, millet balls served with fermented milk, is a widely recognized example; milk-based porridges and tô served with dairy or meat sauces are also characteristic. These foods are shared across borders and with neighboring peoples, rather than being exclusive Fulani inventions.
