A FOOD TRADITION

Goan-Mozambican Cuisine

Goan-Mozambican cooking developed through Goan Catholic and other South Asian communities connected to Portuguese colonial and Indian Ocean networks. It combines Goan techniques and seasoning with Mozambican seafood, coconut, chile and local produce. Vinegar, garlic, ginger, turmeric and toasted spices are used in marinades, relishes and slow-cooked gravies, while rice is a major accompaniment. Characteristic examples include vindaloo-style meat or seafood, xacuti-like spiced curries and ambotik, a sharp tamarind- or vinegar-seasoned fish preparation. The tradition is most visible in family and community cooking and should not be treated as identical to either standard Goan or general Mozambican cuisine.
