A FOOD TRADITION

Gotlandic Cuisine

Gotlandic cuisine developed on the Baltic island of Gotland, where farming, sheep raising, fishing, and maritime trade shaped a food culture distinct from mainland Sweden while remaining connected to regional Swedish practice. Lamb, barley, rye, dairy, saffron, Baltic fish, wild herbs, and seasonal vegetables are central ingredients. Traditional approaches include baking in wood-fired ovens, smoking and salting fish, preserving produce, and making use of hardy island crops. Notable examples include saffranspannkaka, a saffron rice pancake served with berries; gotländsk lamm, preparations centered on local-style lamb; and kajpsoppa, a soup made with wild leek. Modern interpretations often retain these island ingredients.
