A FOOD TRADITION

Gozitan Cuisine

Gozitan cuisine is the regional food tradition of Gozo, Malta’s smaller sister island, shaped by rural farming, fishing, household preservation, and close links with wider Maltese and Sicilian foodways. It commonly uses potatoes, tomatoes, onions, olives, capers, broad beans, seasonal vegetables, local sheep’s-milk cheese (ġbejna), rabbit, and seafood. Characteristic methods include slow braising, wood-fired or household-oven baking, stuffing, pickling, and preserving produce as pastes or relishes. Recognizable examples include ftira għawdxija, a Gozo-associated filled baked bread; qassatat tal-ġbejniet, savory pastries with local cheese; and rabbit stew prepared in a wine- or tomato-based sauce. These foods are shared with broader Maltese cooking but retain strong Gozo associations.
