A FOOD TRADITION

Great Plain cuisine

Great Plain cuisine, or Alföld foodways, developed across Hungary’s expansive grassland and farming zones, with related traditions extending into neighboring countries. It emphasizes pantry-stable grains, onions, paprika, pork, poultry, freshwater fish, seasonal vegetables and preserved foods. Open-fire cooking in kettles and cauldrons, slow braising, smoking and bread baking are characteristic techniques, reflecting pastoral and agricultural livelihoods. Representative examples include gulyás, pörkölt and fish soup prepared in the Tisza or Danube style. The tradition also encompasses layered noodles, cabbage dishes, farmhouse breads and substantial bean soups, rather than being reducible to the internationally familiar goulash alone.
