A FOOD TRADITION

Guinea-Bissau Coastal Rice Cuisine

Coastal rice cuisine in Guinea-Bissau is shaped by low-lying floodplains, estuaries and long-established rice cultivation, especially among communities of the coastal and riverine belt. Rice is served with fish, shellfish, okra, leafy vegetables, cassava leaves, palm oil and aromatic pepper sauces. Cooks commonly prepare ingredients as thick broths or stews poured over rice, while fish may also be dried, smoked or grilled before being combined with sauce. Representative dishes include caldo de peixe, caldo de chabeu and rice preparations with crab or oysters. This tradition overlaps with Balanta and other coastal foodways and should not be assigned exclusively to one people.
