A FOOD TRADITION

Guna Cuisine

Guna cuisine is associated with Guna communities in Guna Yala and on the adjacent mainland, where island, reef, and forest environments shape a seafood-centered food culture. Fish, coconut, plantains, cassava, corn, yams, and other tubers are prepared with relatively direct techniques such as boiling, simmering, roasting, frying, and cooking in leaf or coconut-based mixtures. Fish and coconut soups are especially characteristic, often accompanied by boiled plantain or cassava. Representative examples include tulemasi, a fish and coconut soup; grilled or roasted fish served with plantains; and cassava bread or other cassava preparations. The cuisine shares ingredients and techniques with neighboring Caribbean peoples while retaining Guna cultural context and food practices.
