A FOOD TRADITION
Gurian Cuisine
Gurian cuisine is associated with western Georgia’s Guria region, where subtropical lowlands and wooded foothills support a food culture built around maize, beans, walnuts, dairy, poultry, greens, and preserved or pickled ingredients. Cooking tends toward strongly seasoned vegetable and legume dishes, cornmeal staples, and festive pastries, with fresh herbs and walnut sauces adding depth. Examples include Guruli khachapuri, a crescent-shaped cheese pie often prepared with egg; mchadi, cornmeal bread; and lobio or pkhali variations made with local herbs and vegetables. Gurian practices overlap substantially with neighboring Imeretian and Megrelian traditions, but their named dishes and regional identity make the cuisine a useful conservative catalogue addition.
