A FOOD TRADITION
Hamgyong cuisine
Hamgyong cuisine is associated with the mountainous and northeastern Korean region extending toward the East Sea and the borderlands with China and Russia. Cold winters, upland farming, and access to marine foods have encouraged extensive use of potatoes, buckwheat, maize, hardy greens, fish, shellfish, and fermented seasonings. Characteristic cooking includes noodle making, drying and fermenting seafood, and preparing hearty soups and dumplings. Examples include Hamhung-style naengmyeon, often served with a spicy seafood-based dressing; gamja-jeon, a potato pancake; and sundae, a stuffed sausage found in several northeastern styles. The tradition is shared culturally across changing political borders.
