A FOOD TRADITION

Hazaragi Cuisine

Hazaragi cuisine is associated with Hazara communities of central Afghanistan, especially the highland Hazarajat, while also reflecting migration to Kabul and other cities. It commonly uses wheat, barley, potatoes, legumes, dairy, herbs, and modest amounts of meat, with dried yogurt products providing acidity and substance in a cold, upland environment. Typical techniques include boiling, slow cooking, griddle baking, and drying or fermenting dairy. Examples include quruti, a yogurt-based dish often served with bread, dalda, a grain-and-legume preparation, and bolani-style filled flatbreads. Hazaragi food overlaps with neighboring Afghan traditions but retains a recognizable highland emphasis on grains, dairy, and filling communal dishes.
