A FOOD TRADITION
Idrija cuisine
Idrija cuisine is a localized but well-established culinary tradition from the historic mining town and surrounding hills in western Slovenia. It developed around mine workers’ households, mountain agriculture, and preserved provisions, combining potatoes, buckwheat, onions, pork, turnips, herbs, and simple doughs. Characteristic techniques include hand-forming filled dumplings, making thick soups, preserving meat, and using wild or cultivated greens in rustic stews. Key examples are idrijski žlikrofi, small potato-filled dumplings traditionally served with bakalca sauce; bakalca, a mutton or lamb stew; and smukavc, a cabbage-and-potato dish. The tradition is strongly tied to local work, household economy, and communal food customs.
