A FOOD TRADITION

Imeretian Cuisine

Imeretian cuisine comes from central-western Georgia and is often characterized by lighter herb-seasoned preparations, walnuts, beans, maize, dairy, and abundant garden produce. Cheese, greens, poultry, and vegetables are frequently combined with garlic, coriander, and other fresh herbs, while breads and filled doughs play a central role in household and festive meals. Notable examples include Imeruli khachapuri, a round cheese-filled bread; pkhali, finely chopped vegetables bound with walnut paste; and lobio, seasoned beans served in varied warm or cool forms. These foods are shared across western Georgia, so Imeretian cuisine should be presented as a regional style within a connected culinary continuum rather than as an exclusive invention.
