A FOOD TRADITION

Indo-Guyanese Cuisine

Indo-Guyanese cuisine developed through the foodways of descendants of Indian indentured laborers, especially in Guyana’s coastal sugar-growing regions, while incorporating local produce and Caribbean techniques. Rice, split peas, roti, dhal, cassava, plantain, coconut, tamarind, and spice blends are common foundations. Cooking often includes tempering whole spices in oil, slow simmering, griddling flatbreads, and preparing pickles or chutneys alongside savory dishes. Recognizable examples include cook-up rice, dhal puri with curry, and seven curry, a festive meal associated particularly with Hindu communities. This tradition shares ingredients and techniques with wider Caribbean and South Asian cuisines rather than having exclusive origins.
