A FOOD TRADITION

Kalanga Cuisine

Kalanga cuisine is associated with Kalanga communities in eastern and northeastern Botswana, with closely related foodways across the Zimbabwe border. It is built around sorghum, millet, maize, beans, cowpeas, groundnuts, melons, leafy greens and fermented milk. Common techniques include pounding grain into thick porridge, simmering legumes and greens, drying seasonal produce, fermenting milk, and cooking relish-based stews. Representative foods include bogobe jwa lerotse, a melon-enriched porridge; dikgobe, a mixed legume and grain preparation; and delele, an okra relish. These foods overlap with wider southern African cooking, but their combination and cultural setting make Kalanga foodways a useful distinct catalogue entry.
