A FOOD TRADITION

Kanembu Cuisine

Kanembu cuisine is associated with the Kanem region and the western and central shores of Lake Chad, with close connections to Kanuri foodways across Nigeria, Niger, and Cameroon. Millet and sorghum are commonly prepared as thick porridges, couscous-like grains, or stiff accompaniments for sauces. Groundnuts, okra, sesame, dried fish, freshwater fish, and mutton contribute flavor and substance, while sun-drying and pounding are important techniques. Familiar examples include boule served with sauce, millet or sorghum chéré, and fish or meat stews enriched with okra or groundnut. Terminology and recipes vary between Kanembu communities and neighboring Lake Chad peoples.
