A FOOD TRADITION

Karnataka Cuisine

Karnataka cuisine encompasses varied traditions across the Deccan plateau, coastal belt, forested areas, and southern tablelands. Rice, ragi, millets, lentils, coconut, jaggery, tamarind, curry leaves, and local greens are important, with meat and seafood practices differing by community and locality. Techniques include fermenting batters, roasting spice powders, tempering, steaming, and slow-cooking coconut-based gravies. Bisi bele bath, ragi mudde, and neer dosa are recognizable examples, while Udupi vegetarian cooking forms one influential strand. The cuisine is connected to neighboring Tamil, Konkani, Andhra, and Kerala traditions without being reducible to them.
