A FOOD TRADITION
Kashubian Cuisine
Kashubian cuisine belongs to the Kashubian cultural region of northern Poland around Pomerania, shaped by Baltic access, sandy soils, fishing and a strong regional identity. It combines potatoes, rye, buckwheat, cabbage, onions, dairy, freshwater and marine fish, berries, mushrooms and preserved pork. Smoking, pickling, marinating and long simmering are common, while fruit and fish may appear in combinations unusual elsewhere in Poland. Representative foods include śledź po kaszubsku, herring with onion and tomato-based seasoning; ruchanki, small yeasted pancakes; and zupa brzadowa, a fruit soup traditionally made from dried fruit. Potato and fish dishes are particularly characteristic.
