A FOOD TRADITION

Khmer Loeu Cuisine

Khmer Loeu Cuisine is a cautious umbrella for the varied food traditions of Cambodia’s Indigenous highland peoples, including communities in the northeast and other upland areas. It cannot be reduced to one standardized menu, but recurring patterns include rice and other local staples, freshwater fish, forest greens, bamboo shoots, wild herbs, and locally available meats. Techniques include grilling over open fire, pounding ingredients with salt and herbs, boiling clear or sour soups, fermenting foods, and cooking rice or other mixtures in bamboo tubes. Examples can be described as grilled river fish with herbs, bamboo-cooked rice, and forest-green or bamboo-shoot soups. Further ethnographic differentiation is needed before assigning separate entries to individual peoples.
